Meet our new Cookery expert
23/06/2011
After a career in both education and health, Julie Austin has realised a long held ambition to set up her own catering company –ExperTeas. She works with her business partner, friend, and cordon bleu trained chef, Claire Dainton, to provide superbly cooked and beautifully presented food throughout Devon, Dorset and Somerset.
After her daughter’s recent diagnosis with coeliac disease, Julie became driven to cook for those on special and restricted diets. This led her to set up a mail order cake company providing cakes and sweet treats for those unable to tolerate gluten and wheat. Products for those on a range of other special diets may also be provided for on request.
Julie is particularly interested in creating and sharing her knowledge about dishes that use fresh, easily available, in-season products.
She strives to use quality, local ingredients that give her cooking the maximum number of nutrients and ensures that it is bursting with taste and flavour. In the present economic climate she sees the sense in using products when they are at their most plentiful – and therefore cost less in terms of both price and carbon footprint.
Julie is looking forward to sharing easy to follow recipes for delicious dishes that are easy on the purse strings and follow the traditional pattern of using what is in season, but with the occasional modern twist to bring the dishes bang up to date.
She would also like to receive your recipes so please do send them to editorial@maturetimes.co.uk
